Features and varietals Each label is unique and is hand painted on canvas. XdT is the flagship wine of the cellar. In 2004 there were 10 numbered Magnums produced. Tempranillo 90%, Experimental Varieties 10%. A Special Edition with a painting that replicates some scenery of the XdT winery, painted by C. Alpizar and Luis Kindelán may be availiable.
Winemaking Grapes come from vineyards whose soil is clay and limestone rich in calcium carbonate with a stock vine age of more than 35 years for tempranillo. More than 20 years old vines for experimental varieties. Less than 3500 kg per hectare are harvested. Picked by hand in 18kg crates A second manual selection is done at the winery ahead o de-stemming Fermentation of the grapes done separately in oak vats, allowing the yeast content of each variety to retain and develop its own characteristics. A pre-fermentation maceration is carried out at low temperature for better extraction. Xdt is kept in new oak barrels for 15 months 50% Spanish Oak of extrafine grain from Navarre, wood aged for 36 months . Xdt is pioneer in its use. Project Developer with spanish Ministry of science 50% French oak. Manual “batonnage” of each barrel and malolactic fermentation with fine lees
Tasting notes Subtle and complex. Purple-colored, it offers up an alluring nose of toasty oak, pencil lead, spice box, violets, and blackberry. On the palate XdT 2004 is extremely elegant with excellent volume, intense flavors, sweet tannins. Even though it is a subtle, it has enough structure to gain complexity with additional cellaring. Drink from 2015 to 2029. Decant the bottle 2 hours before tasting the wine
